http://1and1.com has been a great webhost for me. they have great prices and great free apps when you sign up. yes they also have alot of details on your websites stats.
there are many hosting companys and you use tracking cookies to keep track on your visitors and stat counters.
To answer the second part of your question, you need a log analyzer program. I've used awstats a few times, but there are probably others available as well. Some hosts might provide the service for you, or you can do t yourself if they give you access to the log files for your site.
I have website, and I use a free web host, but the domains arent free, but you can get a subdomain for free. Go to: http://freewebs.com/ or: http://tripod.com and theres many more. But I suggest freewebs because its a lot more easier. And you can google search "web counter" and you can put it on a web page to see how many people have viewed your site. I hope this helped!
